Apricot Cream Coffee Cake

Delicious recipe I swear by for any day I simply want a delicious breakfast snack or if I need to bring something to share somewhere. This recipe holds true year after year!!!! Let me know what you think once you try it 🙂

  • ½ cup warm water
  • 2 eggs
  • ¾ cp powdered sugar
  • 1 tsp salt
  • ½ cp sour cream
  • ½ cup butter, melted
  • 4 ½ cps flour
  • 2 envelopes yeast

  • 8 ounces cream cheese
  • 1 cp powdered sugar
  • ¼ t almond extract
  • apricot jelly or any other flavor jelly

  1. 1 egg white
  2. ¾ cp sugar
  3. ¾ cp flour
  4. ¼ cp butter
  5. 1 tsp vanilla

  1. Using a bread maker or a bowl mix all dough ingredients together
  2. Divide dough into 2 balls and set in separate bowls and cover with a cloth or towel and let raise in a warm place for 45 minutes
  3. Pre-heat oven to 350 degrees
  4. Roll out each ball into a 12X10 rectangle and place on two different baking sheets. I recommend using two silpat baking mats on the baking sheets to place the dough on as well
  5. In a small bowl, using a mix master, mix the cream cheese, ½ cp of the powdered sugar, and almond extract
  6. Spread the cream cheese down the center of each rectangle
  7. Spread the apricot jelly or your choice of jelly down the center of the rectangles on top of the cream cheese
  8. Cut 3 inch wide strips width wise down the length of the cake and criss-cross the strips as seen in the picture
  9. In a bowl, whisk one egg white and smear on top of both cakes
  10. Make streusel topping combine sugar, flour, butter, and vanilla and mix until fully combined and ingredients are in small balls as seen in picture
  11. Top dough with streusel, you might have to press it in to the dough a little but it should stick to the egg whites
  12. Bake for 20-25 minutes or until golden brown
  13. Cool slightly
  14. Enjoy!!
