Pork Loin with Satay Sauce and Rice

Ingredients:

  • Pork loin
  • 2 cloves crushed garlic
  • 3/4 cp. parsley
  • 1/4 cp. honey
  • 1/4 cp. peanut butter
  • 2 T. hoisin sauce
  • 2 T soy sauce
  • 2 T lime juice
  • 1 T orange juice
  • 1 T ginger root grated
  • 1 t. hot chili sauce
  • 1 t sesame oil
  • rice

Sauce:

  • 1 cp. chicken broth
  • 1 cp. orange juice
  • 1 spoon cornstarch
  • leftover marinade

Directions:

  1. In a large bowl, mix all the ingredients from above. Pour the ingredients into a large ziplock bag and add pork loin to marinate 2-3 hours or overnight.
  2. Spray a small pan with cooking spray. Bake pork loin for 2 hours at 350 degrees.
  3. Cook rice.
  4. Combine sauce ingredients in a medium saucepan and cook over medium heat until it boils and is slightly thickened.
  5. Serve pork loin with rice and drizzle sauce over it.
