Vanilla Brownies

These brownies were my students last treat of the year and they loved them. 🙂 I served them with chocolate ice cream.

For the brownie:

  • 1/2 cp butter
  • 1 (12ounce) bag white chocolate chips
  • 1 1/4 cp flour
  • 3/4 cp sugar
  • 1 t. vanilla
  • 1/4 t. salt
  • 3 eggs

For the glaze:

  • 3 cps powdered sugar
  • 6 Tbls. butter, softened
  • 1 t. vanilla
  • 3 Tbls. milk or water

  1. Pre-heat oven to 350 degrees.
  2. Spray a 13×9 pan with cooking spray then sprinkle with flour, pouring out the excess.
  3. In a large pot over low heat, melt the butter and white chocolate chips, stirring frequently, just until it’s melted. (The mixture will appear slightly curdled.)
  4. Remove from the heat and cool.
  5. Stir in the flour, sugar vanilla, salt and eggs until well blended.
  6. Spread mixture evenly in the pan.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. For the glaze: In a medium bowl, mix all the glaze ingredients until nice and smooth & spreadable. You can add more milk a T. at a time if needed.
  9. Once brownies have cooled, spread glaze over them.
