Peanut Butter Cupcakes with Peanut Butter Frosting and Chocolate Ganache

Ingredients: (I doubled the ingredient in the post.)

For Cupcakes:

  • 1 cp. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • pinch of cinnamon
  • 3/4 butter, at room temperature
  • 1 cp. peanut butter
  • 1 cp. brown sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 1/2 cp. milk

For Frosting:

  • 3/4 cp. chocolate chips
  • 1/4 cp. heavy cream

For Ganache:

  • 1 cp. peanut butter
  • 1 1/2 tsp. vanilla
  • 2 1/2 cps. powdered sugar
  • 6 T. milk


  1. Pre-heat the oven to 350 degrees. Grease cupcake pan or fill with cupcake liners.
  2. In a small bowl mix flour, baking powder, salt and cinnamon.
  3. In a large bowl mix butter, peanut butter, and brown sugar until blended. Add vanilla and egg and mix well.
  4. Add flour and milk alternately while still mixing. Make sure all ingredients are fully incorporated.
  5. Fill cupcake tins 3/4 full with batter.
  6. Bake at 350 degrees for 20 minutes or until a toothpick inserted comes out clean.
  7. Cool cupcakes in pan and then remove and place on a cooling rack.
  8. While cupcakes are cooling, for the frosting, melt chocolate chips and cream in a small glass bowl for 1 1/2 minutes in the microwave. Mix together until it thickens.
  9. For the ganache, beat peanut butter and vanilla until blended. Add 3 T. milk and half of the sugar while mixing. Add the rest of the milk and sugar and mix until smooth. If needed, you can add more tablespoons of milk.
  10. Use your fingers to put the frosting on the cooled cupcakes first then spread on the ganache with a spoon.
