Chicken Rose Manna Salad

This is a healthy and light salad with a tang of citrusy blend great for the spring, summer and parties. If you need to bring a dish to share this is super easy! I know it is March but my dad was craving this salad so I quickly whipped it up for him. The salad shown in the picture is halfed but the normal recipe makes a huge bowl of salad. I dare you to make it 🙂 you’ll  love it.



  • 1/2 box Orzo noodles
  • 1/2 cp. celery, dried and chopped
  • 1 cp. red grapes, cut in half
  • small can mandarin oranges
  • small bag of cashews (optional)
  • 1 large can white chicken, drain water
  • 3 T. frozen orange juice
  • 3 T. canola oil (you can also use grapeseed oil)
  • 3 T. vinegar
  • Little salt


  1. Cook orzo noodles according to package directions
  2. Chop celery, cut grapes in half, drain water from canned chicken and shred chicken with a fork
  3. Mix orange juice, oil, vinegar, and little salt and let marinate while noodles cool
  4. Once noodle are cooled mix with the celery, grapes, mandarin oranges, cashews, chicken and marinade
  5. Cool at least 30 minutes in the refrigerator before serving
