Tuscan Turkey Meatloaf

This is an amazing meatloaf recipe using ground turkey. There is a short preparation time and it cooks for 1 hour. If you want more then double all ingredients and use 2 meatloaf pans.

Meatloaf Ingredients:

  • 1 Lb. ground turkey
  • 1 egg white
  • 1/4 cp. skim milk (Any kind of milk will work. I used almond milk.)
  • 1/2 cp. oatmeal
  • 1/4 cp. grated or shredded parmesan cheese (Optional. I did not use.)
  • 1 t salt
  • 1/2 t pepper
  • 1 t oregano
  • 1 T fresh parsley
  • 1 garlic clove, minced
  • 1 cp. marinara sauce

Marinara Sauce :

  • 1/2 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 cp. tomato sauce
  • 1 10 Oz. can crushed tomatoes
  • 1 t dried oregano
  • pinch of red pepper flakes
  • salt and pepper to taste

Directions for Meatloaf:

  1. Preheat oven to 325 degrees.
  2. In a large mixing bowl, mix together ground turkey, egg white, oatmeal, milk, (and cheese optional) with your hands for the best results.
  3. Next mix in salt, pepper, oregano, garlic, and parsley. Mix well.
  4. Press into a lightly greased 9X5 meatloaf pan. Top with the marinara sauce.
  5. Bake at 325 degrees for 1 hr.
  6. Cool for 10 minutes before serving.

Directions for Marinara Sauce:

  1. Saute onion and garlic in a medium sauce pan for about five minutes until the onions soften and the garlic is fragrant.
  2. Add in tomato sauce and crushed tomatoes mixing well.
  3. Add oregano, red pepper flakes, and salt and pepper to taste.
  4. Mix together all ingredients and let simmer for 5 minutes.
